Kale Salad
Ingredients:
1 bunch of Kale
ΒΌ cup of Extra Virgin Olive Oil
2 Limes, juiced
Black pepper
Sea Salt
Tomatoes
Green Peppers
Red Onions
Raw Coconut Vinegar
- Thoroughly clean and remove stem from the kale.
- Chop kale
- Soak kale in water at room temperature for about 30 min (Optional) In my opinion it helps tenderize the kale.
- In large bowl, add the kale and extra virgin olive oil.
- Massage the extra virgin olive oil until the kale starts to soften and wilt, 2 to 3 minutes.
- Add lime juice, sea salt, and black pepper
- Add tomatoes, green peppers, red onions and toss
- Add a splash of raw coconut vinegar
